  • 1/2 cup granulated white sugar (for topping)

Instructions

  1. Prepare the pastry cream: Heat whole milk until simmering. Whisk together egg yolks, sugar, salt, and vanilla bean paste until smooth. Gradually add cornstarch while whisking; temper with hot milk. Cook until thickened, remove from heat, fold in butter, cover with plastic wrap directly on the surface, and chill for at least an hour.
  2. Make the cookie dough: Beat softened butter with remaining sugar until fluffy. Add egg and vanilla; mix well. In another bowl, combine flour and salt; gradually incorporate into wet mixture.
  3. Assemble cookies: Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheets; create indents in each ball and fill with chilled pastry cream before sealing.
