  • 1 chicken breast
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice (optional)
  • 1 tsp dried thyme or parsley
  • 68 asparagus spears, trimmed
  • 1 cup baby potatoes, halved
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tablespoons fresh parsley, finely chopped

  3. In the same skillet, combine chicken broth, Dijon mustard, heavy cream, lemon juice (if using), and herbs. Simmer for 3-5 minutes until thickened. Return chicken to coat in sauce.
  4. Sauté asparagus in another pan with olive oil and salt for about 4-5 minutes until tender.
  5. Serve sautéed asparagus topped with creamy Dijon chicken and roasted potatoes on the side.
