  • 1.5 cups cheddar cheese (shredded)
  • 1/3 cup cream cheese (softened)

Instructions

  1. In a large pot over medium heat, melt the butter and sauté the onions and jalapeno for about 5 minutes until soft. Add garlic and cook for an additional minute.
  2. Stir in the tomato paste, corn, Rotel tomatoes, black beans, chicken broth, and seasonings. Bring to a gentle simmer.
  3. Cook the chicken in the soup for about 20-25 minutes until fully cooked. Remove and shred.
  4. Return shredded chicken to the pot and reduce heat to low. Add cheddar cheese and cream cheese; stir until combined and creamy.
