- 1 cup Alfredo sauce (store-bought or homemade)
- 2 cups fresh spinach
- 1 ½ cups shredded mozzarella cheese
- 1 tsp garlic powder
- 1 cup low-sodium chicken broth
- 1 tbsp agar-agar powder
Instructions
- Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with garlic powder, salt, and pepper. Cook in a skillet over medium heat for 6-7 minutes per side until cooked through (internal temp of at least 165°F). Let cool before slicing thinly.
- Lay each chicken slice flat, spreading a layer of Alfredo sauce on top. Add spinach leaves and shredded mozzarella before rolling them up tightly.
- Place roll-ups seam-side down in the prepared dish. Pour any remaining Alfredo sauce over them and sprinkle with additional mozzarella.
- Bake for 20-25 minutes until bubbly and golden brown. Allow to rest before serving.
