Instructions

  1. Toast pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant. Let cool.
  2. In a large bowl or stand mixer, beat softened butter until fluffy. Add white and brown sugars; mix well.
  3. Incorporate eggs and vanilla until fully combined.
  4. Gradually add flour with salt, baking powder, and baking soda without overmixing.
  5. Gently fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips.
  6. Chill dough for at least one hour (up to twenty-four hours) in the refrigerator.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop dough onto prepared sheets using a measuring cup, spacing them apart.
  9. Bake for approximately 12–14 minutes until golden around the edges but still shiny in the center.
  10. Cool briefly on sheets before transferring to wire racks.
