Instructions
- Toast pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant. Let cool.
- In a large bowl or stand mixer, beat softened butter until fluffy. Add white and brown sugars; mix well.
- Incorporate eggs and vanilla until fully combined.
- Gradually add flour with salt, baking powder, and baking soda without overmixing.
- Gently fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips.
- Chill dough for at least one hour (up to twenty-four hours) in the refrigerator.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop dough onto prepared sheets using a measuring cup, spacing them apart.
- Bake for approximately 12–14 minutes until golden around the edges but still shiny in the center.
- Cool briefly on sheets before transferring to wire racks.
