Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix together the wet ingredients: shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well combined.
  3. In another bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually combine with the wet mixture until just mixed.
  4. Prepare the cinnamon swirl by combining granulated sugar and cinnamon in a small bowl.
  5. Layer half of the batter in the pan followed by half of the cinnamon sugar mixture. Repeat with remaining batter and sprinkle on the last of the cinnamon sugar. Use a knife to swirl gently through the batter.
  6. Bake for 60–65 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool for about 10–15 minutes before transferring to a wire rack to cool completely.
