  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling.
  3. In a large bowl, whisk together both flours, corn starch, baking soda, baking powder, and salt.
  4. Cream cold butter and granulated sugar in a stand mixer until smooth.
  5. Add eggs and vanilla; mix until incorporated.
  6. Gradually add dry ingredients to the wet mixture until combined.
  7. Shape dough into a rectangle; spread the filling evenly on top.
  8. Roll up tightly and cut into 10-12 cookies.
  9. Bake for about 9-11 minutes until edges are golden.
  10. Cool before frosting with cream cheese mixture.
