  • 1/2 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • 1/4 cup melted coconut oil
  • 1/4 cup cocoa powder
  • 2 tablespoons maple syrup (or 1/2 cup melted dark chocolate)

Instructions

  1. Line a muffin tin with silicone liners.
  2. In a small pot, combine raspberries and maple syrup over medium heat. Simmer for 8-10 minutes until softened. Mash and stir in vanilla and chia seeds; let sit to thicken.
  3. In a bowl, mix melted coconut oil, cocoa powder, and remaining maple syrup until smooth (or melt dark chocolate).
  4. Pour chocolate mixture into lined cups (1 tbsp each) and freeze for 5 minutes until firm.
  5. Add raspberry filling (1 tbsp each) on top of the chocolate layer, smooth it out, and freeze for another 5 minutes.
  6. Top with another tablespoon of chocolate mixture and freeze for at least 2 hours until set.
