  • 3 packages instant ramen noodles (discard flavor packets)
  • 1 cup diced red bell pepper
  • 1 cup sliced white button mushrooms
  • ½ cup diced sweet yellow onion
  • 1 cup broccoli florets
  • 3 tablespoons soy sauce (regular and dark)
  • 3 tablespoons hoisin sauce
  • 2 teaspoons sriracha

Instructions

  1. In a mixing bowl, whisk together soy sauces, hoisin sauce, and sriracha; set aside.
  2. Cook ramen noodles in boiling water for 1-2 minutes; drain and rinse.
  3. Heat 1 tablespoon oil in a skillet over medium-high heat; cook chicken until golden and cooked through, then set aside.
  4. In the same skillet, add remaining oil and sauté bell pepper, mushrooms, and onion for 2-3 minutes.
  5. Add broccoli florets; sauté until bright green.
  6. Stir in garlic and ginger; cook for another minute.
  7. Return chicken to the skillet; mix well.
  8. Toss in cooked ramen noodles and pour sauce over everything; mix thoroughly.
