  • 2 bell peppers (any color)
  • 1 large sweet onion
  • 8 oz mushrooms
  • 6 tbsp vegetable oil
  • Seasoned salt, cumin, smoked paprika

Instructions

  2. In a mixing bowl, toss sliced bell peppers, onion, and mushrooms together.
  3. Heat 1.5 tbsp oil in a heavy skillet over high heat and sear half of the vegetables until brown. Remove and repeat with remaining vegetables.
  4. Add another 1.5 tbsp oil in the same skillet and cook the chicken until done. Return all vegetables to the skillet and combine.
