Instructions

- Pound chicken breasts to a thickness of about ¼ inch. Layer each with ham and cheese; tightly roll and secure with toothpicks.

- Heat olive oil and butter in a skillet over medium heat; sear each roll for about 2–3 minutes per side until golden brown.
- Transfer to a baking dish and bake uncovered for 20–25 minutes until cooked through at an internal temperature of 165°F (74°C).
- For the sauce: In a saucepan, melt butter, whisk in flour for one minute, gradually add milk while stirring, then incorporate Dijon mustard and Parmesan until thickened. Season to taste.
