- 3 1/2 to 4 oz fresh mozzarella cheese (cubed)
- 2 tbsp fresh basil (chopped)
- 1/3 cup sun-dried tomatoes (chopped)
- 2 eggs
- 2 1/2 tbsp grape-seed oil (or extra virgin olive oil)
- 1 1/4 cups buttermilk
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×4 inch bread pan.
- In a large mixing bowl, combine all-purpose flour, bread flour, baking powder, baking soda, and salt.
- Stir in cubed mozzarella cheese, chopped basil, and sun-dried tomatoes until evenly mixed.
- In another bowl, whisk together eggs, grape-seed oil (or olive oil), and buttermilk until smooth.
- Pour wet ingredients into the dry mixture and stir until just combined; the dough will be sticky.
- Transfer the dough to the prepared bread pan and spread evenly.
- Bake for about 40–45 minutes or until golden brown; a toothpick inserted should come out clean.
