- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cup heavy cream
- 2 teaspoons Cajun seasoning (plus more for the chicken)
- 3 tablespoons flour
- 3 cloves garlic (minced)
- Olive oil or avocado oil
- Butter
- Rotel diced tomatoes with green chilies
- Shredded cheddar jack cheese
Instructions
- Season the chicken breasts with Cajun seasoning and lightly coat in flour.
- Heat oil in a skillet over medium-high heat and cook the chicken until golden brown on both sides, about 6–7 minutes per side. Set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth and bring to a simmer.
- Stir in cream, honey, hot sauce, additional Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes. Mix well.
- Return the cooked chicken to the skillet and add Rotel tomatoes and shredded cheese on top. Cover until cheese melts.
- Serve hot over rice or your choice of side.
