  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • 2 teaspoons Cajun seasoning (plus more for the chicken)
  • 3 tablespoons flour
  • 3 cloves garlic (minced)
  • Olive oil or avocado oil
  • Butter
  • Rotel diced tomatoes with green chilies
  • Shredded cheddar jack cheese

Instructions

  1. Season the chicken breasts with Cajun seasoning and lightly coat in flour.
  2. Heat oil in a skillet over medium-high heat and cook the chicken until golden brown on both sides, about 6–7 minutes per side. Set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth and bring to a simmer.
  4. Stir in cream, honey, hot sauce, additional Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes. Mix well.
  5. Return the cooked chicken to the skillet and add Rotel tomatoes and shredded cheese on top. Cover until cheese melts.
  6. Serve hot over rice or your choice of side.
