Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large pot, heat olive oil and butter over medium heat. Add leek, broccoli stems, and potato; sauté for about 3 minutes. Stir in garlic, salt, pepper, and mustard powder.
  3. Pour in stock and enough water to reach desired thickness; bring to a simmer for 10 minutes.
  4. On a lined baking sheet, bake prosciutto for about 10-12 minutes until crispy; set aside.
  5. Blend soup until smooth; return to pot over low heat.
  6. Stir in orzo and cook for about 5 minutes; add broccoli florets and heavy cream, cooking until both are tender.
