Ingredients
- 4 lamb shanks
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Fresh parsley for garnish
Instructions
- Season lamb shanks with salt and pepper.
- In a Dutch oven over medium-high heat, add olive oil and sear lamb shanks until browned on all sides. Remove and set aside.
- In the same pot, sauté onions, carrots, and celery until softened; add garlic and cook until fragrant.
- Deglaze with red wine, scraping up brown bits from the pot. Let simmer for a few minutes.
- Return lamb shanks to the pot along with beef broth, tomato paste, rosemary, thyme, and additional seasoning if desired. Bring to a boil then reduce heat to low.
