Instructions
- Preheat your oven to 325°F (165°C).
- For the crust, crush the crackers, mix with melted butter and press into a springform pan. Bake for 10 minutes.
- Combine blueberries with sugar, flour, and lemon juice in a bowl.
- Beat cream cheese until smooth; add sugars, sour cream, cornstarch, vanilla extract, and eggs one at a time.
- Layer half the cheesecake mixture on the crust, add blueberries, then top with remaining cheesecake. Bake for 70-85 minutes.
- Cool completely before refrigerating for at least four hours or overnight.
