  • 110 g all-purpose flour
  • 80 g dark brown sugar
  • 70 g butter
  • 800 g full fat cream cheese (room temperature)
  • 260 g granulated sugar
  • 200 g sour cream (18% room temperature)
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract
  • 4 large eggs

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. For the crust, crush the crackers, mix with melted butter and press into a springform pan. Bake for 10 minutes.
  3. Combine blueberries with sugar, flour, and lemon juice in a bowl.
  4. Beat cream cheese until smooth; add sugars, sour cream, cornstarch, vanilla extract, and eggs one at a time.
  5. Layer half the cheesecake mixture on the crust, add blueberries, then top with remaining cheesecake. Bake for 70-85 minutes.
  6. Cool completely before refrigerating for at least four hours or overnight.
