  • 8 oz black olives (drained and sliced)
  • ½ cup parmesan cheese (shredded)
  • ½ cup parsley (chopped)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and cool under cold water.
  2. In a medium bowl, whisk together olive oil, lemon juice, Italian seasoning, sugar, red apple vinegar, garlic, Dijon mustard, salt, and pepper.
  3. In a large mixing bowl, combine the cooled pasta with salami, cucumber, grape tomatoes, bell peppers, red onion, black olives, mozzarella pearls, parmesan cheese, and parsley.
