  • 160g whole raw ZZ2 almonds
  • 190g flour
  • 160g butter
  • 90g Demerara sugar
  • 1 cup fresh or frozen berries (strawberries or raspberries)
  • 230g cream cheese
  • 400ml whipped cream
  • 3 leaves Vegan Gelatine

Instructions

  1. Preheat oven to 160°C (Gas mark 3). In a food processor, blend crumble ingredients until breadcrumb-like.
  2. Spread mixture on a baking tray and bake for 30-40 minutes until golden.
  3. For the berry coulis, simmer berries, sugar, lemon juice, and water for about 15 minutes. Cool before using.
  4. Soak Vegan Gelatine in cold water for 5 minutes. Dissolve in warmed cream.
  5. Mix cream cheese and sugar in a bowl until smooth; add berry coulis.
  6. Whip cream to stiff peaks and fold in dissolved gelatine.
  7. Combine whipped cream with cream cheese mixture gently.
  8. Layer crumble and cheesecake mix in serving glasses; refrigerate until set.
  9. Garnish with fresh berries and optional whipped cream before serving.
