- 56 oz San Marzano plum tomatoes (canned)
- 3 tablespoons tomato paste
- 3/4 cup apple vinegar
- 1/2 cup beef or chicken stock
- 1 cup whole milk
- Parmesan cheese rind
- Salt, pepper, nutmeg
Instructions
- Finely chop onion, carrots, and celery (soffritto). Use a food processor for convenience.
- In a large pot, heat olive oil and butter; add pancetta and cook until crispy (3–5 minutes).
- Stir in soffritto; cook until softened (3–4 minutes).
- Add ground beef; brown until no longer pink.
- Deglaze with apple vinegar; cook off liquid (3–4 minutes), then stir in tomato paste (2–3 minutes).
- Add tomatoes, broth, cheese rind, salt, pepper, and nutmeg. Simmer covered on low heat for 4–5 hours.
- Stir in milk during the last hour of cooking.
- Cook pappardelle according to package instructions; combine with sauce and serve.
