  • 150 g granulated sugar (for apples)
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 4 egg yolks
  • 2 tsp vanilla bean paste
  • 1 tbsp cornstarch
  • 150 g granulated sugar (for custard)
  • 2 tbsp cornstarch (for custard)
  • 50 g granulated sugar (for custard)
  • 1/4 tsp salt (for custard)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Peel and thinly slice apples; mix with 150 g sugar and salt. Let macerate for 15 minutes.
  3. Bake apple mixture in a dish for about 40 minutes until tender.
  4. In a saucepan, heat milk with 50 g sugar and salt until just boiling.
  5. Whisk egg yolks and cornstarch; temper with hot milk. Cook until thickened.
  6. In a serving dish, layer half of the baked apples, followed by half of the custard. Repeat layers.
  7. Chill in the refrigerator for at least two hours before serving.
