Instructions

  1. Reduce apple cider by simmering 1 cup until it reduces to ¼ cup; let cool.
  2. Preheat oven to 350°F. In one bowl, whisk flour, baking soda, baking powder, salt, and spices. In another bowl, beat butter and brown sugar until fluffy; add egg and vanilla.
  3. Gradually mix in cooled cider reduction and dry ingredients alternating with milk.
  4. Drop tablespoon-sized rounds onto lined baking sheets; bake for 10-12 minutes and cool completely.
  5. For buttercream, beat softened butter until creamy; gradually add powdered sugar, cooled cider reduction, and salt until smooth.
  6. Assemble by piping buttercream and drizzling caramel on half the cookies before sandwiching with another half.
