  • 1 carrot (cut into matchsticks)
  • 1 can mandarin oranges (drained)
  • 4 cups romaine lettuce (chopped)
  • 1 red bell pepper (sliced thin)
  • For the dressing: 1/2 cup rice apple vinegar, 3 tablespoons sesame oil, 2 tablespoons raw honey, 1 teaspoon sea salt, 1-2 teaspoons sriracha
  • For garnish: 1/4 cup almonds (toasted), 2 tablespoons sesame seeds (toasted)

Instructions

  1. Prepare vegetables by adding cabbage, carrots, and mandarin oranges to a mixing bowl.
  2. In a jar with a lid, combine dressing ingredients and shake well until fully mixed.
  3. Pour ½ to ¾ of the dressing over the vegetable mixture and refrigerate until ready to serve.
  4. Keep romaine lettuce and bell peppers separate until just before serving.
  5. Toast almonds and sesame seeds in a frying pan over medium heat until lightly browned.
  6. Just before serving, mix in romaine lettuce and bell peppers with the cabbage mixture; top with toasted nuts.
  7. Serve with extra dressing on the side.
