Ingredients

Scale
  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 egg (room temperature)
  • 1 egg yolk (room temperature)
  • 1 1/2 tsp. vanilla extract
  • 1 tsp. almond extract
  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 cup sprinkles
  • 3/4 cup unsalted butter (room temperature) for frosting
  • 2 tsp. vanilla extract for frosting
  • 23 cups powdered sugar for frosting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9X13 inch casserole dish with parchment paper and lightly grease the sides of the pan.
  2. In a stand mixer, cream together butter and sugar until light and fluffy.
  3. Add in one whole egg, one egg yolk, vanilla extract, and almond extract. Mix until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt until well blended.
  5. Gradually add the dry ingredients into the wet mixture while mixing on low speed. Once combined, gently fold in the sprinkles.
  6. Transfer the dough into the prepared pan and press it flat. Bake for about 16–20 minutes or until the edges start to turn golden brown. Allow to cool on a wire rack.
  7. For frosting, beat together remaining butter with vanilla extract. Gradually mix in powdered sugar until you achieve a smooth, spreadable consistency.
  8. Once the bars are cooled, lift them out using the parchment paper, spread frosting over the top, and decorate as desired.
